Crispy Carrots

Our friend, Joel, is a farmer, and he gave us a great tip when we harvested the carrots out of our garden. Last year, the carrots didn't last long in the fridge before they became spongy and we ended up tossing a bunch of them. Joel recommended that we soak this year's crop in ice water for 24 hours before we cleaned them and put them in the fridge. No more spongy carrots! They are so sweet and crispy this year. Thanks, Joel!

i'll have to give that a try! i usually resort to cutting up my carrots before they enter the fridge because if i dont, they end up getting spongy before i *remember* to eat them. If i cut them up first, i'm much more likely to use them!

It's pretty simple really... Spongy carrots lack water... A carrot is a root...add water to root and it takes in water....Cripsy carrots!!!!


I pull them and let them sit in a wheelbarrow overnight or longer. Then I clean them and they go to market or in my Belly! They usually last up to 3 weeks in a fridge after the soak...


If they start to go bad I recommend a juicer...if you think a tripple shot of coffee is electifying try drinking the juice of 5 carrots.
